Llangoed Hall’s wonderful location and historic building provides a constant inspiration to all of its staff
Calum C Milne
Calum Milne knows Llangoed Hall inside out having managed the property for Sir Bernard Ashley from 2003 to 2007. Following the sale of Llangoed Hall in 2012, Calum returned as Managing Director and has since overseen an entire refurbishment of the hotel and grounds. In the summer of 2013, Calum was made an ambassador of the Cambrian Mountains Initiative, due to Llangoed Hall's contribution to the overall sustainability of this region of Wales.
Says Calum Milne, Managing Director; "I am delighted to have overseen the hotel go through this transformation which has enhanced the local area. Over the many years I have known Llangoed Hall it has become a second home. Llangoed Hall has a great past, present and future and the story is yet to be completed".
Brian has worked at Llangoed Hall on and off for nearly 15 years now. Like Calum Mine, Brian is a Scot, however has spent more time in Wales than in Scotland. Brian, much akin to previous department heads, has worked for Sir Bernard Ashley KBE (co-founder of Laura Ashley).
Brian returned to work at Llangoed Hall as Operations Manager in July 2012.
Adrian grew up in a traditional Yorkshire mining community where everyone had whippets, racing pigeons and allotments. Being a keen hunting man, Adrian went into hunt service at the age of 18, working his way up to being huntsman of several packs of hounds.
Always a keen gardener, Adrian started work on a private family estate in 2010 where he spent six years, before joining Llangoed Hall earlier this year.
"I love the grounds, the history of the place. We have team of three in the gardens - Mandy Hobbs, under gardener, Toby Moore, groundsman - and myself. It's a busy working environment which is just how I like it. I love the fact that whatever we grow here, the chefs have a use for it and it is great to liaise with Head Chef about future planting ideas."
Adrian's interests outside work include country pursuits, hunting, fishing, shooting. He has two children both named after plants - Myrtle aged 8 and Whin aged 5. Whin is the Yorkshire word for gorse!
Chef de Cuisine
Nick joined the team at Llangoed Hall in February 2013 after being recruited by Calum Milne following a cook-off competition. Since then he has recruited a very strong and passionate kitchen brigade. Nick’s enthusiasm with regards to food is second to none, which shines throughout his varied accomplishments at Llangoed Hall.
Nick and his team have planted their own vegetables and herbs in the gardens to complement the existing soft fruit including raspberries, strawberries, gooseberries, figs, apples, pears, plums and much more. Nick has renovated a large greenhouse, housed chickens, quail and ducks in the grounds and established a smoke-house.
Nick has worked on improving all the menus at Llangoed Hall and the afternoon tea menu (which is hugely popular) can now be adapted to suit special dietary requirements so everyone can enjoy the experience.
Lynsey is in charge of Llangoed Hall’s very busy events office, with its annual schedule filled with weddings, conferences, group functions and special occasions.
Lynsey is a recent graduate from the University of South Wales where she studied events management. It was always her goal to become an events manger and after joining Llangoed Hall in January 2016 as a trainee she was then offered the role.
Lynsey is Welsh through & through, having been born and bred in the Caerphilly Valley. She enjoys good food, experimenting with flavours, running and Sduko.
Cedric is 20 years old and originally from Brittany in France. He has a Diploma in Food & Beverage and joins Llanagoed Hall after gaining experience from several different Relais & Chateaux Hotels in his native Brittany and from the 3 Michelin Star restaurant Bernard Loiseau.
Outside work Cedric loves playing football and also enjoys a bit of gardening.
Marie Taillandier is 20 years old and from Brittany in France. She has a Diploma as a Waitress and Receptionist and has worked in several Relais & Chateaux hotels.
Marie has always wanted to become a wedding planner and greatly enjoys working with the team here at Llangoed Hall.
Outside work Marie loves to travel, draw and look after her pet Angora Rabbit!
