The hotel’s organic kitchen garden is a constant source of inspiration to Head Chef Nick Brodie and he is rightly very proud of it. As he puts it himself: “We have 17 acres of land so sustaining ourselves is a doable means, going into the greenhouse or walking over the vegetable plots is very inspiring. It makes menu planning easy and keeps you bang on season with the dishes. The smokehouse adds an extra dimension to what we do. We even use our own chickens, ducks and quails for eggs.”
